Today Oak Vault Line operates from a small warehouse and packing room in the Fushimi district of Kyoto. There are two full-time staff and one part-time packer who comes in on Tuesdays and Thursdays. The catalogue has grown to around eighty items, but the selection process has not changed: every item gets used in a kitchen for at least four weeks before it is listed. Some things have been tested and rejected three or four times before a version good enough to sell was found. That is not a story we tell to sound rigorous. It is just what happened.
The list of things I would have stocked instead became the shop.
